2 tablespoons unsweetened cocoa powder, sifted

2 teaspoons baking powder

½ teaspoon baking soda

7 tablespoons soft unsalted butter 1 cup superfine sugar

1 heaping tablespoon Christmas-red paste food coloring

2 teaspoons vanilla extract

2 eggs

¾ cup buttermilk

1 teaspoon cider vinegar or other vinegar

2 × 12-cup muffin pans

Preheat the oven to 325°F and line the muffin pans with paper muffin cups.

Combine the flour, cocoa, baking powder, and baking soda in a bowl.
